Smokin a big fattie today

I have the day off and feel just good enough to cook so I fired up the smoker and got a couple things going. First up is my first attempt at a fattie. It's a bacon wrapped pile of sausage with cheese in the middle. I forgot to add the jalapenos so there won't be much heat on this one. 

 

Next is an old recipe I have for flank steak. It's rolled up with mushrooms and bell peppers and placed in a pan with some water in it. It gets smoked into a wonderful tasting piece of meat. 

 

Everything is about to come off the smoker so I will post up the pics in a few minutes.......

 

Okay, here is the flank steak before hitting the smoker.......all rolled up in bell pepper and mushrooms.

I used half Italian and half spicy breakfast sausage. Gave it just enough heat and flavor without adding any peppers to it.

Both are pretty dang good. That fattie is going to make a great breakfast. The wife wants it on toast with a fried egg on top in the morning. I now have a plan to make another one using ground beef and stuffing it with cheese, onions, peppers, and some pickles and then slicing it into hamburgers once it comes off the smoker. I'll use bbq sauce on it as I roll it and then smoke it all in.

Holy hell I just drooled all over my iPad... it’s 5am now I’m hungry...
