Dinner: Open face mushroom cheeseburger (a bit different than you are thinking)

I recently went on a very low carb diet. In an effort to keep things interesting I've been cruising some of the Keto diet recipe web sites. I came across something I thought was cool. A burger on two giant Portobello mushrooms as buns.

 

Now where I live big Portobello's are spendy. Like $2 each. So I had come up with this twist. An open face mushroom cheeseburger.

 

Cook a burger fully. Take a large Portobello and cut off the stem so it's flush inside. Place cheese on the mushroom, place the burger and then another slice of cheese. Cap it with the hunk of stem you cut off. So it's like a little hat. I used one slice each of Havarty and Gouda cheeses.

 

I baked mine in an air fryer for 4 mins at 400F

 

One is enough for a meal. And this is what you get:

There is a pizza place here that serves a Portobello mushroom with no meat with cheese and stuff. They are very good.
