Last day of vacation blowout

Choosing to spend my last day of vacation smoking some ribs. I'm doing a half load for my smoker which is four racks of baby backs. The smoker is heating up and the ribs are rubbed and resting on the counter. I will put them in at noon for three hours and they will be wrapped in foil with butter and apple juice at 3pm, at 4 pm they will come out and go onto the grill for the final step of firming up and getting sauced.  Wife is making potato salad and I'm sure we can find something else to go with the ribs for dinner. I have a couple zucchini from the garden we can do something with.

Yeah, I can do eight in the smoker but only had four on hand....they won't last long even though there is only two of us.

It was.  The wife made tater salad and corn on the cob and a homemade cherry pie from cherries off our tree. It was the best meal I have had in two weeks.  That reminds me I need to clean and reset the smoker.....

Some purists say that bark is from smoke and dry rub. Crust is from the carmelized sauce.
